Others experiences with mcas and help with identifying symptoms?

For context I was (kind of?) diagnosed and treated for mcas about two years ago, but that doctor was EXTREMELY expensive and I just couldn't keep up with all of the meds and supplements. The fee for each appointment was about 400 with insurance. I've done my best to just avoid triggers and keep down inflammation, but to be honest I still don't know much about this stuff.

Recently I started having random allergic reactions to some kinds of fruits, and then eventually to every kind of fruit. I thought it was oas at first but the reactions are starting to affect my entire body for days. I try to track the symptoms, and so far I've noticed that the day I eat fruit my whole mouth feels weird and I get some abdominal pain and maybe a headache. Otherwise fine. But the next day I wake up with inflammation and really irritated skin, like it feels tight and dry and there is red patches on my face. My whole body aches and is bloated (or swollen?). This lasts for 2-4 days each time and it's exhausting waiting for my body to feel normal again.
Another symptom (not new, just didn't really put it together until a few days ago) is that my joints tend to swell up pretty bad when I have a reaction like this. I'll be up in bed for hours just trying to get comfortable because my knees and hips will be so achy and no position helps.
I really don't know what to think of it.

Has anyone else had similar reactions or experiences? Not sure if it's okay to ask this, just frustrated atp and want to know I'm not imagining all of this.

If anyone can tell me other stuff about mcas that would also be greatly appreciated! No exact medical advice of course, just tips and info. Thanks!
