Warped pan, what next

Buying advice

We have temporarily moved to a small unit while we renovate, which meant packing most of our cookware away and just choosing a couple of standard everyday use items.

I kept the carbon steel frypan, as it is our main daily driver, lighter than the cast iron, and bigger to accommodate everything.

But the move has also meant switching from a gas hob, to an oven with those older glass/ceramic electric rings.

The pan has a 10" base, and the biggest ring is only 7" in size.

Consequently I'm getting very uneven heating, and my heat control knowledge has gone out the window.

I'm pretty sure the center hotspot has warped the pan with what feels like a rising bubble in the center, despite it being a fairly heavy gauge, so now oil moves to the edge ring, where there is no heat, and the center is sticking.

I'm thinking that the size difference means it'll just never work. So a replacement pan is needed.

I'm considering getting a basic non stick just to use for the next year while we're in this unit.

I could retrieve a cast iron pan from storage, but I don't trust the ceramic cooktop yet, and don't want to ruin another pan.

Or should I start shopping for the next pan to keep once the renovation is complete?
