taking a lil break from reddit but wanted to share some of my current fave recipes before i do in case anyone needs cooking inspiration.

***strawberry milk chia seed pudding***

my second favorite berry. less of a recipe and more of a method (the measurements are just guesses). you’ll need:

\- strawberries

\- almond milk

\- scoop of collagen powder or Greek yogurt

\- chia seeds

\- vanilla bean paste

\- salt

blend until smooth: 5-6 large strawbs, .5-1c almond milk, a scoop of collagen or some Greek yogurt (i like consistency a little more with the yogurt but collagen is more protein), generous dollop of vanilla bean paste and a pinch of sea salt. drink it plain and this will be the best milk you’ve ever tasted i promise. 🙏

pour into your container of choice. add 2-3 tbs chia seeds per cup liquid. more seeds = more gelatinous, less = creamier (i used more in second pic above.) stir once. wait 10 mins. stir again. refrigerate overnight to set!

other recipes i love:

\- i put everyone i know on to this ***watermelon gazpacho*** over the years: https://www.loveandlemons.com/watermelon-gazpacho/. it’s very well balanced, not super sweet. great by itself or serve with rice, avocado, fish to make it heartier.

\- ***lemony orzo with asparagus***: https://cooking.nytimes.com/recipes/1021068-lemony-orzo-with-asparagus-and-garlic-bread-crumbs. the flavors go so well together. non paywalled version: https://heronearth.com/lemony-orzo-with-asparagus-and-garlic-bread-crumbs/.

cheers!
