Poland trip in December - suggestions?

My wife and I own a bakery in Vancouver and are well known for seasonal offerings with northern european roots - stollen, lebkuchen, etc.

We have visited the fall markets in Dresden Nuremburg and between, but we are told that we should check out the holiday markets in Poland.

We will only have 8-10 days in early December, so I am thinking of flying into Gdansk, renting a car, and visiting Torun (gingerbread) and Wroclaw as well. We aren't young and so do not want to do any massive drives.

Any recommendations for bakeries or things to check out near that route?

Am I missing out by not going to Warsaw or Krakow? Any advice appreciated
