Great Track customization for Stunt races?

Long story short. I came from playing old racing that has alot of Stunt involved from tracks, Usually Hot wheels games, Sonic Riders, Rollcage GTA online: Stunt series . And even the Live action film: Speed Racer

So is there any game that has great track editing design meant for stunt racing, basically alot of jumps, split track, banked track.

I welcome GTA V modding if you're highly sure that it won't get me in trouble (I heard alot saying it can get you banned and you need to buy another copy of GTA V)

But I don't wanna hear "Trackmania" cause its just a time-attack, Racing would include factors of not hitting opponents or trying to avoid oppoents sabotage you, which Trackmania doesn't cause its always no collision
