Sicilian Orange Almond Cake 🍊🌰✨

Ciao Scrum chums! Things I've baked recently that stopped everyone completely — this incredibly moist fragrant Sicilian orange almond cake takes me straight back to a beautiful afternoon at a little Sicilian inspired pastry shop we discovered on a Charleston back street where the most extraordinary dense citrusy cake arrived dusted with powdered sugar and the whole café smelled like pure Mediterranean sunshine! 😍

Prep Time: 20 minutes

Cook Time: 40 minutes

Serves: 8–10

Ingredients:

\- 2 cups almond flour

\- ½ cup granulated sugar

\- 3 large eggs

\- Zest & juice of 2 large oranges

\- ¼ cup olive oil

\- 1 tsp vanilla extract

\- 1 tsp baking powder

\- Pinch of salt

\- Powdered sugar & orange slices to garnish

Steps:

1. Preheat oven to 350°F. Grease and line an 8 inch round cake pan.

2. Whisk eggs and sugar together until pale and slightly thick.

3. Add olive oil, orange zest, orange juice and vanilla. Mix well.

4. Fold in almond flour, baking powder and salt until just combined.

5. Pour into prepared pan and bake 35–40 minutes until golden and a skewer comes out clean.

6. Cool completely before removing from pan.

7. Dust generously with powdered sugar and garnish with fresh orange slices before serving.

Scrumtrulescent tip: Use the zest of both oranges generously — that fragrant orange oil in the zest gives this Sicilian cake its incredible bright citrus perfume that makes every single slice taste like pure Mediterranean sunshine! 🍊
