Ireland/Scotland trip for husband/wife?

my wife and I(both early 40s) are hoping to go to Ireland and Scotland for two weeks in September(we haven't booked anything yet, are we too late?). We have never been to either, just sort of looking for some suggestions on where to go/what to see. We love some historic buildings/monuments and some beautiful views. I am pretty big into photography so any beautiful buildings or landscape would be awesome. We don't mind some light hiking and I definitely want to see the Guinness factory. We definitely consider ourselves foodies if that helps at all. Generally, we also like small towns over tourist cities.
