Advice plz! Gammon and cheese fritters…

I have a gammon joint slow cooking for tonight (apple juices, mirepoix, peppercorns, bay leaves, etc)

Do you guys reckon I could do gammon and cheese crispy fritters the same way I’d do Spam fritters with the left overs?
