Poopeater is a weak, easy to counter killer and here's a guide for public servers to NOT embarrassingly lose against him.

I will analyze his two most important abilities, his Wormholes and his Rage to tell you how to counter him.

Get a competent stunner, stunner-loopers are one of the most useful survivors already. Stuff like Rayner, Mamo, Diego hard counter poopeater because they can ez disarm his traps and have tools to make his rage meaningless with their stuns and if the poopeater somehow nearly gets a good teleport and almost hits them, stun. In addition, these three survivors have amazing chase stats which basically makes u really hard to kill against poopeater if you're competent, so you're likely just able to destroy their web.

A few alternatives to these are stuff like Dakota who has a ranged stun with a short cd but has no on reaction invincibility like the three I mentioned. Serena who is like Dakota but with a better stat spread but slower projectile travel time. Kyle who has no on reaction but has the best supportive stun in the game albeit a very unreliable and location dependant one.

Countering his rage is basically just the same as countering his stars as that is where the slow explosion happens. However, due to how the explosion works, it is generally better to use the melee stunners as they have invincibility, like Rayner, Mamo, and Diego because they can just stun him on reaction if they get slowed. That's why I advise using them over Serena or Dakota against him.
