Anyone else's symptoms not hit for a day or two later?

It's extremely frustrating not knowing what is making me sick cause I can eat anything with zero symptoms, but I get really bad brain fog, fatigue, bad sleep, stiffness and muscle soreness but these always hit me in the morning or randomly, but never directly after eating. Yes I have sleep apnea and use a cpap, so it's not that.
