PREP TIME: 30 minutes (plus 30-60 minutes marinating) COOK TIME: 15-20 minutes SERVINGS: 4 DIFFICULTY: Medium

INGREDIENTS: For the Pork Kebabs:

  • 1 lb (450g) ground pork (preferably 80/20 mix for flavor)
  • 2 cloves garlic, minced
  • 1 small shallot, finely minced
  • 1 stalk lemongrass, tough outer layers removed, finely minced (about 1 tbsp)
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp freshly cracked black pepper
  • 1/4 cup finely chopped rehydrated wood ear mushrooms (optional, for texture)
  • 1 tbsp vegetable oil, plus more for grilling
  • 8-10 bamboo skewers, soaked in water for at least 30 minutes

For the Nuoc Cham Glaze:

  • 1/4 cup fish sauce
  • 1/4 cup warm water
  • 3 tbsp granulated sugar
  • 2 tbsp fresh lime juice
  • 1 tsp chili garlic sauce (like Sriracha or sambal oelek)

For the Mango Mint Salsa:

  • 1 large ripe mango, peeled and finely diced
  • 1/4 red onion, very finely minced
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 red bird's eye chili, seeded and minced (optional, for heat)
  • 1 tbsp fresh lime juice
  • 1/2 tsp granulated sugar

For Serving (Optional):

  • Large lettuce leaves (butter lettuce or similar)
  • Fresh cilantro and Thai basil sprigs
  • Cooked vermicelli noodles

INSTRUCTIONS:

  1. Prepare the Pork Marinade: In a large bowl, combine ground pork, minced garlic, shallot, lemongrass, fish sauce, brown sugar, black pepper, chopped wood ear mushrooms (if using), and 1 tbsp vegetable oil. Mix thoroughly with your hands until just combined – do not overmix. Cover and refrigerate for at least 30 minutes, or up to 1 hour, to allow flavors to meld.
  2. Form the Kebabs: Once marinated, divide the pork mixture into 8-10 equal portions. Shape each portion firmly around the soaked bamboo skewers, forming an elongated patty or sausage shape, about 4-5 inches long and 1 inch thick. Place formed kebabs on a clean plate.
  3. Prepare the Glaze: In a small bowl, whisk together all Nuoc Cham Glaze ingredients (fish sauce, warm water, sugar, lime juice, chili garlic sauce) until the sugar fully dissolves. Set aside.
  4. Prepare the Salsa: In another small bowl, gently combine the finely diced mango, minced red onion, chopped mint, minced chili (if using), lime juice, and sugar. Stir well and set aside to allow the flavors to marry.
  5. Grill the Kebabs: Preheat a grill or grill pan to medium-high heat (about 375-400°F / 190-200°C). Lightly brush the grill grates with a bit of oil to prevent sticking. Place the pork kebabs on the hot grill.
  6. Cook and Glaze: Grill the kebabs for 4-5 minutes per side, rotating occasionally, until they are nicely browned and cooked through. During the last 5-7 minutes of cooking, frequently baste the kebabs generously with the Nuoc Cham Glaze, turning them often to build layers of flavor and achieve a sticky, caramelized finish. Ensure the internal temperature of the pork reaches 160°F (71°C) for safety.
  7. Serve: Remove the cooked kebabs from the grill. Serve immediately with large lettuce leaves, fresh cilantro and Thai basil sprigs, and generous spoonfuls of the vibrant Mango Mint Salsa. Cooked vermicelli noodles can be offered on the side for a more complete meal.

TIPS:

  • Don't overmix the pork: Overmixing the ground pork can lead to a tough texture. Mix just until the ingredients are evenly incorporated.
  • Soak skewers thoroughly: Soaking bamboo skewers in water for at least 30 minutes prevents them from burning and splintering on the grill.
  • Adjust spice levels: For more heat, you can add an extra chili to the salsa or increase the amount of chili garlic sauce in the Nuoc Cham glaze. For less heat, simply omit the chili from the salsa.
  • Meal Prep Friendly: The pork mixture can be prepared and marinated a day in advance, and the salsa can be made a few hours ahead of time to allow flavors to fully develop.
