Application Deployment Best Practice

I work at a university and during OSD we use UI++ to assign a PC type, dept/lab/etc, then install all specific applications later in the task sequence based on the PC Type.

Do you typically install all applications during OSD or do you only install essential applications and then let device/user collections handle installing specific applications?
