Help choosing RAM

Hi, I'm building an AM5 PC mainly for CS2. I'll be using a Ryzen 7 7800X3D, MSI B650 Gaming Plus, and an RTX 3060 Ti.

Because RAM prices are pretty crazy right now, I can't really afford a higher-end kit, so I'm trying to get the best value for my money. I've narrowed it down to these two options:

Kingston Fury Beast RGB 16GB (2×8GB) 5600MHz CL36

Kingston Fury Beast RGB 16GB (1×16GB) 6000MHz CL30

The only advantage of the first kit is that it runs in dual-channel mode. I'm not sure how much of a difference that makes compared to using a single 16GB stick?
