1. Air fried seaweed tofu with lazy spicy mayo, avocado, white rice, stirfry vegetables, and fresh tomato, and cilantro. The top plate is topped with marinated yuba (my mom likes it cold ? She’s been using it as a salad topper).
2. Chicken seitan, mashed potato, stirfry vegetables
3. Chicken seitan Shawarma tacos
4. Glaze Tempeh over quinoa and stirfry vegetables, avocado, and air fried dumplings
5. Tofu scramble, pita, zucchini fritters
6. Seitan beat burger with spicy mayo, onions, tomatoes, lettuce, and kimchi
7. Panko crusted tofu, gnocchi with tomato sauce (aquafaba really is a good binder).

Sorry about the mess and imperfections lmao but I’m so proud of myself.
I made It Doesn’t Taste Like Chicken’s recipe for chicken seitan without a food processor and it tasted and looked so good! Doesn’t have that overly starchy wheat flavor I’ve noticed from other recipes. Fresh garlic is a game changer! I used to eat chicken cutlets all the time and for the last seven months I didn’t think to make seitan this way because of the time commitment but it’s not that bad! It’s just combining the ingredients, steaming in a bamboo steamer for 25 mins, rest and it’s done! 8 cutlets for the week. Really surprised how well they turned out.
I’m thinking of making my own tempeh because it’s 6 dollars sometimes at the grocery store but that’s a real time and resource commitment. My mom also helps with meals and thought of the seaweed tofu and zucchini fritters.
