Not sure which model to buy

Due to apples recent price hikes I don’t know which MacBook to buy. I was planning on getting an m5 air with 24gb ram next week but where I live that would cost 500 dollars more which makes me really think about getting an older gen MacBook Pro instead for around the same price if not cheaper.

The computer will be used for university work, excel/powerpoint using a windows emulator and medium video editing and I am debating between getting a refurbished option of.
