Newbie here… can someone explain that white paper to me ( I guess it’s called release paper?

I just started diamond art and I’ve seen videos on Instagram where they peel off smaller sections of white paper at a time. Peeling back the plastic is a pain. I can’t find any videos explaining what it is or how to prep it or how it works?
