How easily can you change builds ?

Noob question. I have been playing nameless sword/spear for a long time and want to change and try different weapons. How difficult it is to do so? I know you can convert inner ways, I assume regrind equipment but are weapons easily converted to different one? Or are you basically locked to one build for most part? Maybe I should level all weapons to change builds more often?

How does it look in the game overall?
