Kunafa Pistachio Chocolate Cake Beautiful Rich Dessert
Okay, hear me out on this one because it sounds a little extra but it genuinely is not that complicated. My sister has been sending me videos of that viral Dubai chocolate bar for weeks now, you know the one with the kunafa and pistachio filling, and I finally caved and tried to turn the whole concept into a cake. I was honestly half convinced it was going to collapse or taste like something was off, but it came together better than anything I have made in a while. Wrote down the full thing here if anyone wants it: https://www.platosinolvidables.com/kunafa-pistachio-chocolate-cake
This kunafa pistachio chocolate cake is eggless which I was skeptical about at first, but the hot coffee and vinegar trick keeps it so moist inside. The pistachio buttercream is rich without being too sweet and the toasted kunafa on top adds this crunchy, nutty layer that honestly makes the whole thing. It is one of those homemade cake moments where you slice into it and feel genuinely proud of yourself.
Here is what I used:
Chocolate cake:
1 1/2 cup Flour
1/2 cup Castor sugar
1/2 cup Brown sugar
1/4 cup Cocoa powder
1 tsp Baking soda
1 tsp Baking powder
1/2 tsp Salt
1/3 cup Vegetable oil
1/3 cup Hot coffee
1 cup Water
1 tsp Vanilla
1 tsp Vinegar
Pistachio buttercream frosting:
3/4 cup butter
1 1/4 cup icing sugar
1/4 cup pistachio butter smooth
1 tbsp tahini
1 drop almond extract
Kunafa:
1 1/2 cups kunafa pastry
1 tbsp butter
Here is how it went:
-
Preheat your oven to 180C and line a 7 or 8 inch round cake tin with oil and baking paper.
-
In a large bowl whisk together the flour, cocoa powder, both sugars, baking soda, baking powder, and salt until there are no lumps.
-
Add all the wet ingredients except the vinegar and whisk until smooth, then add the vinegar at the end and whisk again. The batter will be quite wet and that is totally normal and actually what makes it moist.
-
Pour into the prepared tin and bake for 55 minutes or until a toothpick comes out clean.
-
Let it cool in the tin for a few minutes, then transfer to a wire rack and cool completely before doing anything else.
-
For the frosting, beat the butter, pistachio butter, and icing sugar together with an electric beater for about 3 to 5 minutes until creamy, then mix in the almond extract and tahini. Stick it in the fridge until you need it.
-
For the kunafa, melt the butter in a pan on low heat, add the finely chopped kunafa pastry, and keep stirring constantly for 5 to 10 minutes until it is evenly golden. Take it off the heat and let it cool fully.
-
Slice the cooled cake into 3 horizontal layers with a bread knife.
-
Place the first layer on a plate, spread on two scoops of the pistachio buttercream, add about 3 tablespoons of toasted kunafa, and drizzle a little pistachio spread over that.
-
Repeat with the next layer, then use the remaining frosting to cover the top and sides. I went rustic with mine and it looked great. Press the remaining toasted kunafa around the edges and refrigerate for 15 to 30 minutes before slicing.
A few things I noticed:
Do not rush the cooling step. I got impatient once with a different cake and the frosting just slid right off. Let it cool all the way.
The kunafa toasting part is more hands on than I expected. I turned away for a minute and one side got darker than the rest, so stay close and keep stirring.
The tahini in the frosting is subtle but it adds something that I cannot fully explain, it just makes the pistachio flavor taste more rounded and less one dimensional.
I have some leftover frosting and I am genuinely curious how it would taste on just a plain piece of toast, which probably says something about how good it is.
Has anyone else tried making a kunafa cake recipe like this at home, and if so did you do anything different with the filling layers?
