Skyrim: Vanilla plus Survival Mode + Graphics mods - No DLC confusion.

Question

Hey Reddit, I'm getting back into Skyrim and want a pure experience.

I'll be playing on Legendary difficulty with Survival Mode turned on, and here's why I want to keep things strictly vanilla:

 1) I want to disable the DLCs because I don't want the hassle of figuring out if quests or armor are part of the base game or a DLC.

 2) I want to disable any content that makes the game easier, like backpacks or mods that add spells at the start.

I have two main possibilities in mind:

 1. Get the Anniversary Edition and try to disable all gamplay content and DLCs I don't want, but I need to know if this is possible and if someone can provide a list.

 2. Get the Special Edition, activate only the Survival Mode, but I would also need to install visual mods separately, which seems like a tedious task.

How can I set this up perfectly?"
