looking for content creators who document the step-by-step process of completing a big project {I need inspiration to tackle my own}

like the title says - I really like watching someone break down a big project, like: organizing a big workshop or retreat in x months, or deciding to create something and sell it at a farmers market in one month, something like this.

again im not advertising or soliciting anything, rather I just like to watch the process people take to tackle big projects. right now im working on creating a lesson plan and teaching a big course on my own later this year and I really would like to get some inspiration on how people tackle big projects!!
