I have a question about the switches from fake to real nikki

So if we know that the real Nikki always knows what's going on and can see everything even when the fake Nikki is in control, why is she so surprised and saying "what the fuck" every time she switches back to the real Nikki? Almost like she doesn't know how she got her or what's going on. I'm a little confused about this.
