Lows ecs (UofC and UofA)

Hi, so recently decided to look back to my original high school goal of wanting to become a doctor. My major is compsci and I have one semester left. cGPA is 3.84. wGPA for UofC is 3.95 and for UofA its 3.85. If I do an extra year (so one extra semester), my lowest year would drop for UofA but I don't know if that's worth it. GPA is waited a bit more at UofA (30%) so I could take some easier classes? I'm currently studying for the MCAT to write in September.

My main question is do you think they look poorly on ECS being done closer to the application date? I'll be applying from next year (so not this cycle). Here's what ECs I have so far:

1. Dental clinic receptionist- 1.5 years part-time before I immigrated to Canada and started uni.

2. Teaching exec for an Arts Club - I was an regular member for a year, then become an exec for a year. We had weekly sessions year-long where I would teach members, and we also had some charity events.

3. Teaching exec for CS related club - I was an exec for 1.5 years and hosted workshops and helped with other events such as our yearly hackathon.

4. Japanese language learning on and off for 2 years - took some classes and I'm a weekly member of my university's Japanese club where I talk with Japanese students. I'll be writing one of the certification exams.

5. I run a lot (cardio addict fr, like 1-2 hrs daily its honestly a problem 😭), so I'm gonna be training to run a couple 10ks and eventually a marathon. I've seen some people mention their fitness journeys so I think this might be fun to add. I might also do a powerlifting competition eventually. Would talking about fitness in 2 separate entries be seen as bad?

6. Part-time software internship for 4 months

How did ya'll go about thinking of what ECS to do? I'm going to apply to volunteer for an animal shelter since I like animals, but I'm having trouble thinking of what else I could do. Job market seems cooked so I don't know if I could add a job 😭. I tried a research class but hated it sm and I withdrew so research/masters is our of the picture for me. UofC has 10 entries and I think UofA has around 16 for ecs. I'd appreciate any advice :)
