Need an alternative for ground beef

I was making smash burgers a lot before going almost vegan two weeks ago and now im looking for an alternative for ground beef.

Im based in Austria so if you can suggest any specific brand thats available here in central europe it would be cool.

I was making Bolognese a lot with the vegan ground beef but idk if it will fall apart or how to even cook it in a burger.

Or would you guys make something completely different from scratch?
