Resident Evil 4 Remake

I am currently on my second play through to get this last merchant quest and guess what quest that may be? 😀 I ate the giant fish in my first one right, so does it not respawn in new game plus?? I know the area where it swims but bro I’ve been riding around in this lake for 20 mins looking for him. I just want this trophy 🤦‍♂️ nobody on YouTube seems to have the answers.
