Here is a fun, different take of the classic banana bread! This banana bread is made extra moist with an addition of buttermilk and molasses. It is then topped off with maple syrup for a caramel-like sweetness and flaky sea salt

This was extra delicious and fluffy♥️
(also VERY aesthetic-looking for taking pics lol 😆)

Here is the recipe!

Ingredients

FOR THE BANANA BREAD
• 170 g unsalted butter, softened
• 223g brown sugar
• 72 g granulated sugar
• 340g very ripe bananas, mashed (about 3-4 large bananas)
• 2 large eggs, room temperature
• 6g vanilla paste (or 1 tsp vanilla extract)
• 6g molasses
• 250g all-purpose flour
• 5g baking soda (1 tsp)
• 5 g salt (1 tsp)
• 120 ml buttermilk (½ cup)

FOR THE FINISH
• 60 ml Grade A maple syrup (¼ cup)
• Flaky sea salt, for sprinkling

Instructions

1. Preheat your oven to 325°F Grease a standard loaf pan and line it with baking paper, leaving some overhang for easy removal.

2. In a large mixing bowl, beat the softened butter, brown sugar, and white sugar together for 3-4 minutes until light, fluffy, and creamy.

3. Mix in the mashed bananas until fully combined (the mixture may look slightly curdled-this is normal!)

4. Beat in the eggs one at a time. Add the vanilla paste and molasses, mixing until incorporated. (The batter may look split at this stage - don't worry, it will come together once the dry ingredients are added!)

5. In a separate bowl, whisk together the flour, baking soda, and salt.

6. Add the dry ingredients to the wet ingredients and mix gently until just combined. Pour in half of the buttermilk and mix. Add the remaining buttermilk and mix until the batter is smooth and evenly combined. Avoid over-mixing!

7. Transfer the batter to the prepared loaf pan and smooth the top. Bake for 60-75 minutes, or until the top is deep golden brown & a toothpick inserted into the center comes out clean with a few moist crumbs (Internal temp reaches 200-205°F)

8. As soon as the loaf comes out of the oven, slowly brush or pour the maple syrup over the entire surface. Work in small sections, allowing the syrup to absorb before adding more.

9. Sprinkle generously with flaky sea salt.
