Chest Sorting in Minecraft NO AUTO SORTER

I want to make a chest room but I don't know what categories to split the chests in. I keep searching for Minecraft sort chests no auto sorter but all the results show for auto sorter. How do I sort them normally Im thinking of just putting signs or item frames.
