Looking to set up a little side hustle (pizza van) in the

Next 6-12 months. Looking to get a course booked in Italy in the next couple weeks. Longer term, I,'m wondering would it better to set up shop in the north or south? Im on the border so both would be viable options. Just wondering what the better choice would be with regards to start up costs, licences, insurance etc etc. Cheers!
