Accidentally started Sourdough starter from wheat starch and water.
A week ago I made seitan with the washed flour method. Having a full fridge, I had to leave the starch water outside to settle and separate. The next day the starch water was bubbling and was smelling a lot like sourdough starter, so I took a couple of spoons and mixed it with 50% rye flour and 50% wheat flour and water in a 1:3:3 proportion.
I fed it everyday for the past week, and honestly it seems sourdough starter.
The only difference is that when it peaks, it smells sweeter than my other 106yo sourdough starter, and then when it shrinks down it smells acidic, but less then my other starter.
Today I'm going to bake the first sourdough bread with it. I'm going to share the results on this sub. Wish me luck !
