So i was gonna make some double chocolate cupcakes, with a ganache filling and butter cream frosting to go on top. I was gonna try it out in my new oven, but somehow the muffin pan didn’t fit😔. So i made it into a sheet cake, and cut out small squares. For each square i cut them in half, piped the ganache in between, then topped them up with a vanilla butter cream frosting and a ripe cherry. 

THE RECIPE- 

110 g all-purpose flour  
25 g unsweetened cocoa powder  
5 g baking powder   
1.5 g baking soda   
1.5 g salt   
75 g caster sugar

1 large egg  
60 g neutral oil  
90 g thick yogurt/curd  
60 g warm milk  
2.5 g vanilla extract   
60 g chocolate chips

Ganache and frosting- 

70 g fresh cream  
70 g dark chocolate (55 percent)

125 g icing sugar  
60 g unsalted butter  
5 g vanilla  
30 g milk  
pinch of salt

Preheat your oven to 200 C for 10- 15 minutes.

Mix all dry ingredients in one bowl.

Whisk all wet ingredients in another bowl.

Combine wet and dry ingredients, folding gently until just mixed.

Fold in the chocolate chips.

Fill muffin liners halfway, or in my case a sheet cake pan lined with parchment paper. 

Bake at 200 C for 5 min then reduce to 180 Cand bake for 15 min more.

take it out, cool it completely and cut into squares.

Cut the slice into 2 layers, and pipe the ganache between them. 

Now frost the slice with whatever design u want with the buttercream, and add a cherry on top.

Chill for 3-4 hours, and then enjoy with a cup of coffee!!!
