What can I do better?

29 (F); Demisexual-

After a year long hiatus of going on dates, trying dating apps again. I’ve been on two dates so far.
First person, I think both of us didn’t really feel the vibe during the first meet-up and that’s fair, self-explanatory of why there are no follow ups.
Second person (not usually someone I would usually go for- physical attraction wise), we went on… two dates. We did a walk & talk which honestly felt like it was going well! One point during our car ride, felt like there was a brief connection going on. Later that night, he initiated a dinner date as a second date.
The concern following up on the first date, was that there wasn’t consistent communication going between the two of us during the week to come, which is definitely normal- if you’re busy, I get that, but one would still appreciate at least a check-in. I was the last person who texted and midway through the week, I texted again- maybe this should’ve been a warning.
To my surprise, he suggested we could call and catch up later that night, which again- conversation went well! Lasted three hours. After that, radio silence again on communication until the night before the dinner date. Guess who reached out? You guessed it- me. Asked if we were still on for it and he provided a lengthy response as to why he couldn’t make the dinner date but instead, a lunch date. Also attached locations of where we could go. Thought, “Wow, okay, coming from someone who stated he didn’t like to plan, this is considerate and thoughtful.”
Second date comes, things were okay- felt a little off that day with anxiety and butterflies, and eventually was with that dreadful text, “You’re a great person, but… didn’t feel the spark of romantic connection, but down for the occasional hangouts.”

I think at this point, I’m very frustrated hearing that phrase and wonder if anyone actually does expect an initial first date spark with anyone??

Please also drop some suggestions or tips because I’m tired of the first dates turning into either ghosting or nothing or “you’re a great person, but…” lines
