Should I be using profiles?

I flashed GrapheneOS on my Pixel 10 about two weeks ago, and have just been using the owner profile with Google Services and the Play Store. Should I be using separate user profiles? And why does everyone talk about pushing apps from their main profile? What's the benefit of that?
