Hungry Menace - how do you damage the final enemy?

I'm reaching the final enemy in this Arena without much issue (the miniboss version of Sean's Disciple, according to the training menu), but the only time i've managed to deal any environmental damage to her, it's taken like 2 minutes.

Bringing throwables doesn't even help, it seems like she always dodges.
