How long for peak neurological symptoms to appear?

Question

I’m interested in hearing from anyone with gluten-related neurological disease, particularly gluten encephalopathy, gluten psychosis, gluten-induced depression, mania, gluten ataxia, or other neurological manifestations rather than classical coeliac disease.

In classical coeliac disease, gastrointestinal symptoms can appear within minutes or hours of gluten exposure, with symptoms such as migraine, fatigue, or brain fog often following within hours or days.

My experience has been very different. I have gluten encephalopathy with predominantly neurological and psychiatric symptoms rather than gastrointestinal symptoms. I’ve kept detailed symptom diaries over several years and have been able to identify three recent gluten exposure episodes. Across all three, there was a prolonged latency. Some symptoms such as a rash, bloating, ulcers and fatigue occurred within days, but early neurological symptoms consistently appeared around 6 to 8 weeks after exposure, with the most severe symptoms peaking around 8 to 10 weeks later.

Has anyone else with gluten-related neurological disease experienced such a long delay between gluten exposure and peak symptoms?

If so:
• What neurological condition do you have?
• How long after exposure do symptoms begin?
• When do they peak?
• How long do they take to resolve?

I’m particularly interested in real-world experiences because there seems to be very little published on the timing of neurological manifestations after gluten exposure.
