How do other couples handle a paid time off discrepancy

For context im blessed with a local government job that gives me 6 weeks of vacation, 3 weeks of sick with unlimited rollover, and 1 week of personal time a year. My wife works in the private sector and only gets 2 weeks of pto but will be going to 3 weeks soon.

We have a child and I take off for all of her appointments and whatever needs done with her and sometimes, so she can save her time for whatever. So recently I've started taking off each friday to go golfing since her mom watches are daughter during the day. She is becoming very frustrated because my job is very relaxed on time off and I basically haven't worked a full week since February. She told me its not fair that I get to go do whatever I want while she is working and her mom watches the kid. I asked her mom if she had an issue with it and she dosent, she loves watching her and honestly sometimes I think she wants to steal her. I dont know how to navigate this and would love some advice. Also so people dont get it twisted, I do take off just to spend time with my daughter.
