Étouffée Recipes?

A chicken place by me makes the most amazing chicken étouffée I've ever had. I'll be honest, I've actually never had any other chicken étouffée, but I think this is possibly the best stew/soup I've ever had. Anyone have any good recipes for me to try to replicate it at home? It's so peppery and creamy - unbelievable stuff.
