Have I ruined my garden with anti fungal copper?

I’ve been spraying my squash plants with Captain Jack’s copper octoanate to prevent powdery mildew. I guess I fell for the false belief that organic=safe. I started reading last night that antifungal copper can cause Parkinson’s and that levels build up in the soil forever. Aaaah! Anyway, I can’t tell how much I messed up as lots of other sources say it’s safe as long as veggies are washed before eating and kids don’t come into contact with wet copper spray. Anyway feedback?
