π Quebec does not yet have an official fish... how about sardines?
According to Wikipedia's List of Canadian provincial and territorial symbols each area appears to have its own set of symbols from the options below.
- flag
- coat of arms
- escutcheon
- bird
- animal [mammal]
- fish
- flower
- tree
- mineral
- motto and
- 'Other'
Quebec has the world's loveliest flag βοΈπ΅ and the data table's fields for bird, flower, tree and motto are filled with snowy owl, blue flag iris, yellow birch and 'Je me souviens' ('I remember') but the options for animal and fish (and mineral) are all to play for.
Wikipedia's data table for the symbols of the provinces and territories in Canada.
Many of these items were instituted as Official Thing only quite recently. Prince Edward Island adopted the red oak as its official tree in 1987 and Nunavut adopted purple saxifrage in 2000 as its flower symbol.
Sardines would seem to slot right in to the Official Fish symbol.
Other provinces' fish symbols are bull trout (Alberta), Pacific salmon (British Columbia), Walleye (Manitoba and also Saskatchewan), Arctic grayling (Northwest Territories) and Brook trout (Nova Scotia).
See also the Canadian Government's page* 'About provincial and territorial symbols' from which I learned that Quebec also has an (unofficial) tartan: Quebec, Plaid du.
