How to transition to self feeding?

12 months old

We had a rough start to solids. Back story here: https://www.reddit.com/r/NewParents/s/8v8VdslLni

LO is now turning one, and is consistent with food for a bit over a month. His favorites are broccoli and cauliflower. Will eat some other veggies, fish and almost all fruit. Meat is difficult, but he'll eat 50% of the time some chicken breast.

The way I got him to eat was to feed him from my hand while holding him in my arms (a safety thing for him). Once he was more comfortable with eating, I managed to transition him to the highchair. Now, that he eats more consistently I'm ready to get him to self feed. I started giving him pieces of food that he likes in his hands, and to encourage him to take a bit. He will take a bite on his own if I place the food in his hand, but then will drop it. So I have to replace it in his hand the entire time. If I place the food on a plate or highchair tray, he will attempt to bend and take it with his mouth directly or will just play with it.

He used to know how to self feed. This was before he had a gagging/choking episode (not sure which), at around 6/7 months.

Any advice/tips on how to get him to self feed? Or is what I'm doing enough?
