Mold in coffee beans + mycotoxins?
Hi everyone! I recently watched a video by a doctor named Paul Saladino, talking about how most coffee beans are prone to mold growth when they are drying before they get roasted. The roasting kills the mold, but it leaves behind a chemical called mycotoxins that lead to increased anxiety and jitters from consuming the coffee.
He claimed that the negative side effects that so many people associate with caffeine are actually from these mycotoxins that remain on the coffee, and that mold free coffee avoid this altogether.
This seems to make sense because sometimes, different roasts and beans give me jitters while others don’t.
Does anyone here know about this, if this is a real concern or not, and if I should actively seek out beans that are tested for mycotoxins the way that this doctor said I should?
