Questions about using midi devices on Windows 10 for old gog DOS gaming

As the title suggests...

So I'm 45 and never had a computer during the DOS days. In fact, my only computer experiences from back then were on old Macs until around 99, when I took a computer lab class in 11th grade. I didn't get a PC until 2003 and that was running XP, the first OS that didn't run on top of DOS. So I have no experience with DOS, DOS gaming and by extension, no experience with MIDI devices (apart from having a PCI Sound Blaster Audigy sound card in my first PC).

So my question is: is it possible for me to use a Roland or other brand MIDI device on my PC running Windows 10 for use it with the DOS games from my GOG library (Wolf3d, doom Duke Nukem 3D, Rise of the Triad, Mortal Kombat etc) and output audio to that device for those games while keeping audio over HDMI as my main? Also, forgive my ignorance but what is the difference been a MIDI device and an ad-lib device? Is there a recommended device that handles both MIDI and ad-lib that sounds good AND connects via USB? If not, please suggest what I need to do to accomplish this.

For context, my PC is an HTPC running w10 pro, it's connected to my home theater and I use a gamepad to control most of my content. I would like to keep the audio running through my home theater receiver at all times, so I imagine I would run an cable from a line out to the line-in/aux in on my computer to achieve this.

Lastly, If I'm posting this in the wrong place, I apologize, I'll delete and repost. Thanks in advance guys!
