Q for financial POAs

I take care of my mom’s finances, so I have access to her money and make all financial decisions. She doesn’t have a lot saved; my brother and I agreed that we would use up her money before chipping in if needed. Neither of us expect anything left for inheritances and we’re both fine with that. He wants to set aside about $50K for funeral expenses; we live in a HCOL city. Right now her SS covers her AL costs and we pay out of pocket to keep her in a private room; she has enough to cover that cost for a couple of years unless her circumstances change and we need to move her to a more expensive facility like an SNF. I fully expect that to happen so I’m trying to prepare financially for that moment.

The Q is — while she doesn’t need the bulk of her savings at the moment, should I do what I can to invest what she has and try to make more $ to prepare for the future? If you’ve done this, what are some tips how I can do this without risking too much? The first thing I did was transfer all of her savings to a high yield savings account, but that’s all so far. she has no other assets of value; she has a pension but hasn’t collected it and we haven’t been able to check its value despite having access to her account.
