Is a degoogled android tablet still fine ?

Question

So, I’ve been using an old Ipad for quite a few years now and I haven’t switched for one reason: it has headphone jack. However, I’ve recently become more privacy aware and my device has some obvious restrictions (32gb and getting slower with age) and with chat control passing and my complete loss of faith in any institution ever giving a shit about privacy, I’ve decided to make the jump. Android is obviously still google so it’d be better to hop on GrapheneOS from what I’ve read but the thing is pixel tablet doesn’t have the one feature I really care about (headphone jack) I know you can use an adapter and such but I like watching anime while charging my tablet and dislike bluetooth headphones so it is a nogo for me. With that in mind, does a degoogled android still go a long way about privacy and are you truly safe from being spied on ? Or regardless should I just give up and get a pixel tablet?
