Culling a large set of photos without overwriting existing metadata

I need to cull a large set of pictures from several devices. It's not just photos but also memes, random various downloads, guides, selfies, etc. I've already moved everything into one folder on windows, but I need to sort these images into groups. I'm between using Photo Mechanic by camerabits, this html image sorter: https://github.com/htmlcoderexe/ImageSorter, and the free trial for capture one. What would my best option be here?
