Ausbildung in Germany

I'm Brazilian, 36 years old, and I graduated in Chemical Engineering 10 years ago, although I have no professional experience in that field. I also have epilepsy, which has been well controlled with medication for more than five years. I want to change careers.

I'm currently trying to decide between the following professions:

Mechatroniker

Anlagenmechaniker SHK

Elektroniker für Betriebstechnik

Elektroniker für Energie- und Gebäudetechnik

Elektroniker für Geräte und Systeme

Fachinformatiker für Systemintegration

Do my age, nationality, or medical condition represent any significant obstacles to entering one of these professions?

Is a B2 level of German generally sufficient to start an Ausbildung in these fields?

Do all of these professions currently have strong demand and a genuine shortage of skilled workers in the German labor market?
