I don't think I understand aerial combat

It's not possible to fire at multiple targets at once as for some reason missiles just change target if you select another plane to shoot at, this doesn't seem to make much sense to me because at least AIM-120s and R-77s lock on a radar signature and aren't semi guided so why isn't fire and forget, how do you fight multiple planes at once in a head on engagement.
