I would love sole help figuring out what the issue is with my bread recipe! The starter was gifted to me a few weeks ago and has had several healthy feedings at this point. The recipe I was gifted/have tried several times:

**Ingredients:**
\-50g starter
\-350g warm water
\-550 bread flour (unbleached, store brand)
\-9g salt

**Directions:**
\-mix water & starter, add salt & flour. Mix to a shaggy dough
\-“play with it like slime for a little bit”
\-cover & let rest for 30 minutes, then rework into a smooth ball. Spin in bowl & fold
\-cover w/ damp towel at room temp for 8-10 hours.
\-on a floured surface, shape. Put in another bread bowl & cover for 30-60 minutes.
\-oven at 450f, parchment liner in Dutch oven.
\-flip dough out of bowl and into Dutch oven, score it
\-bake covered on center rack for 20 minutes, uncover & cook for 30
\-wait at least an hour to cut

I’ve tried this a few times and have yet to get a good result. It ends up not having a lot of lift, dense and chewy, hard to cut through. Rock hard by the next day even when putting it in a sealed container.

During the dough making process I’m consistently struggling with how sticky it is. I end up needing to add ***way**** *more* *bread flour than the recipe calls form, and I’m afraid I’m overworking it (because I add flour, incorporate, add, incorporate).

Please help! Any recommendations on what to adjust in the recipe? I also welcome other recipes to try!
