Stremio didn't seem that good, what do I need to change?

I set up stremio a while ago. Found a bunch of recommendation lists I liked and added them on. Set up trakt and torentio. It all seemed like it was going to work great. And then when I went to use it the experience felt no better than streaming sites like moviesjoy. It would offen say there are no sources available, even when a couple days ago there where plenty. Everything took forever to load and was constantly buffering. I do have really bad wifi but Netflix never does that. Would something like real debrid help?

My ideal setup has multiple profiles and would let me and my family watch at the same time in different places. It would be a simple click and play experience, my 85 year old grandpa would never understand having to select your exact source. Ideally each profile would have a watchlist and history. I wouldnt mind setting up recommendation lists manually, as long as I wouldnt have to redo them after every update.

I understand I am basically looking for Netflix the piracy version, so I dont mind paying to get it. I just cant afford much more than Netflix and prime combined (what I would be canceling).

I've seen people here talk about plex and jellyfin but I'm not sure that's a good option for me as I dont have a device I could leave on and running to host a server. Nore enough storage space on any device to have as many full shows and movies as we would want downloaded at the same time. And things like hdds are soo expensive where I live.

Sorry if these are all very newb questions, but the more detailed posts here really confuse me and I'm struggling to find what I'm looking for.😅
