Projects to get into FPGA roles in fintech and HFTs?

I am a student pursuing electrical engeneering and i am looking forward to get an internship in hardware roles in quant firms, and looking for guidance what projects to build and how to validate
them. I am not completely new to FPGAs ,
i have had my digital design course
implemented trafic light counter on Xilinx FPGA dev board
completed HDL bits
