Claude Desktop + M365 connector + data redaction / anonymisation?

In our company, we would like to implement Claude Desktop so that business users can query our data via the M365 connector to create summaries, generate PDFs, and so on.

However, we are subject to strict data protection laws, which means we are not allowed to send sensitive data to Anthropic’s U.S. servers.

I know that you can add custom MCP servers to Claude.

I’d like a solution like Claude Desktop → M365 connector → custom MCP server for redaction/anonymization → Anthropic server in the U.S...

Has anyone implemented something like this before? Any tips, tutorials, links are welcome!
