High Valyrian and Maesters

I wanted to restore Valyria as a High Valyrian, but then I realized I will be forced to have a Maester instead of a regular Physician. I know restoring Valyria isn't the most canon accurate run, but having a Maester leave the Citadel to travel to old Valyria is too far for me.

Can I have regular physicians as High Valyrian or do I have to choose another culture?
